Many will be able to perform instrumental sets during a dinner or drinks reception, and then be able to perform a more up-beat vocal set later on for dancing and singing along to.
When booking Pianists (Pop/Rock):
Rock and pop piano players will all have a slightly different take on classic hits, so it's important to take a careful look at the "repertoire" section of their LMM profile, as well as carefully listening to audio examples. If you are looking to have piano player dress in a certain manner (say, for a black-tie dinner) then it is also important to let them know in advance.
Some pianists will be happy to play an instrument that's in situ - a grand piano in the lobby of a hotel, for example. However, it's important that they get information on how recently the instrument has been tuned, as well as any other details you can provide.
